Taco Soup

2 cups cooked black beans
1 can corn
1 lb ground beef
1 can diced tomatoes
1 pouch taco seasoning
1/2 cup salsa (optional)
1/4 cup onion diced
1/4 cup bell pepper diced
shredded cheddar

Brown the beef with onions and peppers.  Drain excess fat.  Add corn, beans and tomatoes (use the liquid in the cans).  Add enough water to make soup.  Stir in taco seasoning and salsa according to how spicy you like it.  Simmer for at least 15 minutes, stirring occasionally.  Just before serving, add shredded cheese.  Serve with tortilla chips, sour cream and more cheese.
Makes about 6 servings
